HOW TO MAKE CHICKEN BACON RANCH CASSEROLE WITH POTATOES?

  1. preheat oven to 450F. Grease a 9×13 inch casserole dish with oil spray, Cut potatoes into one-inch dice
  2. In a large mixing bowl, mix potatoes with ¼ cup ranch dressing. Add salt and pepper to taste
  3. Transfer potatoes to the greased casserole dish.

  4. Bake potatoes for 30 minutes, mixing one time through cooking to ensure they all cook evenly.
  5. Meanwhile, mix chicken with ¼ cup ranch dressing and marinate while potatoes cook.
  6. When potatoes are done, place chicken on top of potatoes and bake 20 mins more (covered with aluminum foil) or until chicken is done. Take the casserole dish out of the oven and top chicken and potatoes with crumbled bacon, cheese, and green onions.

  7. Bake for 10 more minutes, uncovered until the cheese is melted and bubbly.

I love this dish alongside a mixed greens salad with tomato wedges and red onion drizzled with dijon mustard vinaigrette.

CAN YOU FREEZE CHICKEN BACON RANCH CASSEROLE WITH POTATOES?

You can cook the potatoes and the chicken, add the cheese, bacon, and green onions, cover the casserole with plastic wrap and freeze it until you are ready for the final bake.

I wouldn’t recommend you bake it the last time to melt the cheese.

Once you are ready to eat it, you can put it in the oven and bake it until the cheese is melted and everything is heated for about 30 minutes.

  • 1 (1.5 LB) bag of Baby Boomer Little Potatoes (or Yukon Gold Yellow Potatoes)
  • 2 lbs skinless boneless chicken breasts cut into 1-inch cubes
  • Salt and pepper to taste
  • ½ cup prepared ranch dressing divided
  • 2 cups Mexican Cheese Blend
  • 1 cup cooked and crumbled bacon
  • ½ cup diced green onion

    This sounds very good and easy but here my issue with this that I’m hoping someone can help me with. I struggle putting raw chicken on top of partially cooked potatoes.       It is so quick to make it in the oven, I have never made it in the slow cooker, but you could try cooking the potatoes on low for 2 hours, then adding the chicken mixture and cooking it for another two hours. Then just add the cheese and continue cooking until melted.
